Tomato and Spinach Loaf

The key to the deliciousness is the wonderful, flavour-filled ingredients.


Ingredients:

  • 2 ½ cups Baker's Dream flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • Big pinch of salt

  • 1 egg

  • 1 ½ cups milk

  • 3 Tbsp butter

  • 2 handfuls of spinach, chopped

  • 1 handful cherry tomatoes, quartered

  • Handful grated cheese (optional)

  • 1 tsp dried herbs


Method:

  1. Start by turning your oven to 180°C then line and grease a baking tin.

  2. In a big bowl combine the flour, baking powder, soda and salt then make a well in the middle. Crack your egg in the centre then pour in the milk and combine to a thick dough. Add butter into a mug and microwave until soft then stir through the dough.

  3. Add the quartered cherry tomatoes, finely chopped spinach and grated cheese then once combined transfer to your lined baking tin and even out on top. Sprinkle with a little more grated cheese then bake in your preheated oven for 40-60 minutes or until a skewer comes out clean.
