Nothing is better than freshly baked love-filled cookies!
Ingredients:
2 Tbsp Cornstarch
½ tsp Vanilla Extract
1 Egg Yolk
115g Unsalted Butter, room temperature
½ Cup Icing Sugar
¾ Cup & 2 Tbsp All Purpose Flour
Method:
Preheat the oven to 175ºC and line a baking tray with baking paper.
Cream the butter and icing sugar until fluffy.
Add the vanilla extract and egg yolk. Beat until well combined.
Add the flour and cornstarch, stir until combined.
Roll dough into 12 balls and place onto the baking tray. If the dough is sticky, place in the fridge, covered for 30 minutes.
Lightly press down on the center to create a small print using your finger.
Fill the cavity with strawberry jam.
Place in oven and bake for 10-12 minutes, or until golden brown.
Transfer the cookies to a wire rack and let cool for 15 minutes.
Once cooled, sprinkle with icing sugar.
