Love is in the air with this easy-to-bake Strawberry Jam Cake!
Ingredients:
1 ½ Cups Baker's Dream All-Purpose Wheat Flour
1 ½ tsp Baking Powder
½ tsp Salt
6 Tbsp Unsalted Butter, softened.
1 Cup Sugar plus 2 Tbsp, divided.
1 Large Egg
1 tsp Vanilla Extract
½ Cup Milk
4 Tbsp Strawberry Jam
Method:
Preheat the oven to 180°C and butter the cake pan.
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In the bowl with an electric mixer or whisk, beat the butter and 1 cup of the sugar until fluffy, for about 3 minutes. Add the egg and vanilla and mix until well combined. Gradually add the flour mixture, alternating with the milk, and mix until smooth. The batter should be thick.
Transfer the batter to the prepared pan. Place the strawberry jam on top of the cake, covering the batter. Sprinkle the remaining 2 tablespoons of sugar over the jam.
Bake for 10 minutes, then reduce the heat to 160°C and bake until the cake is lightly golden. (Bake for about an hour). Let the cake cool in the pan on a rack.
Serve with vanilla ice cream (optional).
