Strawberry-buttercream Cookies

bakers dream strawberry-buttercream cookie recipe

Treat yourself with these strawberry-buttercream-filled soft butter cookies. They will definitely have you coming back for more!


Ingredients:

  • 175g butter, softened

  • ¼ cup icing sugar

  • ½ tsp vanilla extract

  • 1 ½ cups Baker's Dream flour

  • ¼ cup custard powder

  • 50g butter, softened, extra for filling

  • ½ cup icing sugar, extra for filling

  • 1 Tbsp custard powder, extra for filling


Method:

  1. Preheat the oven to 180°C. Line a baking tray with baking paper and set it aside.

  2. Place the butter and icing sugar in the bowl of a stand mixer and beat until light and fluffy. Then, add the vanilla and beat again until well combined.

  3. Add the plain flour and custard powder to the butter mixture and mix on a low speed until a dough has formed.

  4. Roll teaspoons full of dough into balls and place them on the prepared baking tray. Flatten the biscuits with a fork.

  5. Bake for around 15 minutes or until they start to turn golden. Set them aside to cool completely.


Buttercream Filling:

  1. Place the extra butter, icing sugar, and custard powder in the stand mixer bowl and beat well until all the ingredients are well combined.

  2. Use the buttercream filling to sandwich the cooled biscuits together.

  3. Store any uneaten biscuits in an airtight container at room temperature.
