Snowball Dessert

Baker's Dream Snowball Dessert Recipe

Homemade Sweet Snowball Dessert!


Ingredients:

  • 125g Butter, room temperature

  • Cup Caster Sugar

  • 2 Eggs

  • 1 tsp Vanilla Essence

  • 2 Cups Baker's Dream All-Purpose Flour

  • 2 tsp Baking Powder

  • ½ tsp Baking Soda

  • 1 tsp Salt

  • ¼ Cup Milk

  • ¼ Cup Apricot Jam

  • 1 ¼ Cup Desiccated Coconut

  • Pink Food Colouring


Syrup:

  • 1 Cup Water

  • 1 ½ Cups Sugar


Method:

Syrup:

  1. Add the water and sugar to a saucepan and bring to a boil. Simmer until the syrup thickens slightly (make sure it the syrup isn't too thick)

  2. Keep syrup warm on the pan at the lowest heat.


Snowballs:

  1. Add a few drops of food colouring to the coconut, set aside.

  2. Preheat the oven to 180°C.

  3. Mix the butter until light and fluffy.

  4. Add the sugar and mix until creamy, then add in the vanilla essence.

  5. Add eggs one at a time, mix until well combined. Add a few drops of the food colouring.

  6. Add Baker's Dream All-Purpose Flour, baking soda, baking powder and milk, then mix into a thick batter.

  7. Line a baking sheet with parchment paper and fill a piping bag with the batter. Cut a hole at the tip and pipe the batter into small rounds.

  8. Bake for 8 minutes or until slightly golden brown.

  9. Remove from oven and let cool on a wire rack.

  10. Heat the jam in the microwave for 20-30 seconds.

  11. Sandwich the cakes with apricot jam in the centre, dip in the syrup and roll in the coconut.

  12. Serve and enjoy!
