Homemade Sweet Snowball Dessert!
Ingredients:
125g Butter, room temperature
⅓ Cup Caster Sugar
2 Eggs
1 tsp Vanilla Essence
2 Cups Baker's Dream All-Purpose Flour
2 tsp Baking Powder
½ tsp Baking Soda
1 tsp Salt
¼ Cup Milk
¼ Cup Apricot Jam
1 ¼ Cup Desiccated Coconut
Pink Food Colouring
Syrup:
1 Cup Water
1 ½ Cups Sugar
Method:
Syrup:
Add the water and sugar to a saucepan and bring to a boil. Simmer until the syrup thickens slightly (make sure it the syrup isn't too thick)
Keep syrup warm on the pan at the lowest heat.
Snowballs:
Add a few drops of food colouring to the coconut, set aside.
Preheat the oven to 180°C.
Mix the butter until light and fluffy.
Add the sugar and mix until creamy, then add in the vanilla essence.
Add eggs one at a time, mix until well combined. Add a few drops of the food colouring.
Add Baker's Dream All-Purpose Flour, baking soda, baking powder and milk, then mix into a thick batter.
Line a baking sheet with parchment paper and fill a piping bag with the batter. Cut a hole at the tip and pipe the batter into small rounds.
Bake for 8 minutes or until slightly golden brown.
Remove from oven and let cool on a wire rack.
Heat the jam in the microwave for 20-30 seconds.
Sandwich the cakes with apricot jam in the centre, dip in the syrup and roll in the coconut.
Serve and enjoy!
