In this recipe, sour milk is used to help the cupcakes rise.
This recipe makes 12 cupcakes
Ingredients:
1 egg
½ cup cocoa powder
½ cup shortening (or unsalted butter)
1 ½ cups Bakers Dream Cake flour
½ cup sour milk
1 tsp vanilla
1 tsp baking soda
1 cup sugar
½ cup hot water
Method:
Place all the ingredients in a bowl and beat well with an electric beater or whisk thoroughly using a hand whisk.
Prepare your oven to 180°C.
Pour your cupcake mixture into a greased baking tin or into paper cupcake holders.
Bake for 20 minutes until an inserted toothpick or fork comes out clean.
Pro tips:
Instead of cupcakes, this makes a great 9x9 cake. Make sure to grease your pan thoroughly so the cake does not stick.
Don't have sour milk on hand? Add 1 Tbsp vinegar to cup and then add fresh milk to make 1/2 cup. Let sit a few minutes before using.
