Homemade South African Mealie Bread!
Ingredients:
2 Cups Sweet Corn Kernels
½ Cup Milk
2 Eggs, lightly beaten
2 Tbsp Salted Butter, melted
1 ½ Cups Baker's Dream All-Purpose Flour
2 Tbsp Corn Flour
2 Tbsp Sugar
2 tsp Baking Powder
1 tsp Salt
½ tsp Paprika
Method:
Preheat the oven to 180°C. Grease a loaf pan or line it with parchment paper.
Place milk and one cup of the corn in a blender, blend until pureed.
Add the remaining corn and blend until kernels are coarse.
Transfer mixture to a medium bowl, then add the eggs and melted butter.
Add the Baker's Dream All-Purpose Flour, corn flour, paprika, salt, sugar and baking powder to the mixture.
Pour batter into the prepared pan.
Bake for 45-50 minutes (you can check if the bread is cooked completely by inserting a toothpick into the centre to make sure it comes out clean).
Cool the mealie bread in the pan for 5 minutes, then transfer onto a wire rack to cool completely.
Serve and enjoy warm!
