These soft, chewy Lemon Crinkle cookies are delicious and full of flavour!
Ingredients:
2 Cups All-Purpose Flour
1 Cup Granulated Sugar
1 Egg
1 Egg Yolk
¼ tsp Salt
4 Tbsp Lemon Juice
3 Tbsp Grated Lemon Zest
1 tsp Vanilla Extract
½ tsp Baking Soda
½ Cup Butter, melted
Powdered Sugar, for coating
Granulated Sugar, for coating
Method:
In a bowl, mix together flour, salt and baking soda. Set aside.
In a large bowl, add melted butter. Add sugar and whisk until smooth. Add in the egg, egg yolk, vanilla extract, lemon juice and zest. Whisk until well combined.
Stir in the dry ingredients and mix until a dough forms.
Refrigerate for at least 2 hours.
Preheat the oven to 160ºC and line two baking trays with baking paper.
Fill a bowl with powdered sugar, and a seperate bowl with granulated sugar.
Roll the dough into small balls and roll into the granulated sugar, and then into the powdered sugar.
Place them onto the baking tray and bake for 10-12 minutes.
Let cool and serve!
