Our Gingerbread cookie recipe is perfect for beginner bakers and a fun way to bring the family together in the kitchen.
Ingredients:
1 Large Egg
1 tsp Baking Soda
½ tsp Ground Cloves
1 Cup White Sugar
2 tsp Ground Ginger
¼ tsp Salt
5 Tbsp Brown Sugar
2 ¼ Cups All-Purpose Flour
½ tsp Salt
2 Tbsp White Sugar, for coating
1 tsp Ground Cinnamon
¾ Cup Unsalted Butter, softened
Method:
Add 2 Tbsp sugar in a small bowl and set aside.
In a large bowl, use a hand mixer (or whisk) to combine the butter and white sugar until light and fluffy. Add the egg and mix until combined.
Using a spatula, fold in the sifted baking soda, cinnamon, brown sugar, cloves, flour and ground ginger until well combined.
Cover and freeze the mixture for 20-25 minutes.
Preheat the oven to 175ºC. Line a baking tray with baking paper.
Shape the dough into 24 medium-sized balls. Roll each ball in the bowl of white sugar until coated. Place on the baking tray.
Flatten each ball slightly with the bottom of a glass.
Bake for 10-12 minutes, switching the tray to the other oven rack halfway through.
Remove from oven and allow to cool for 5 minutes. Transfer the cookies to a wire rack to cool completely.
