Nothing beats doughnuts well nothing beats homemade doughnuts rolled in sugar. Follow this easy recipe.
Ingredients:
475g Baker's Dream Cake Flour
5ml Salt
30g Fresh Yeast (or 1 Tbsp dried yeast)
125ml Milk, warm
2 Tbsp water
90g Castor Sugar
90g Butter, softened
2 Eggs, beaten
½ tsp Ground Cinnamon
A pinch of ground cardamom
A pinch ground mace
Method:
1. Sift the flour and salt together.
2. Dissolve the yeast in the milk and water.
3. Add the Baker's Dream Flour and castor sugar into a bowl and add the dissolved yeast.
4. Mix to a smooth paste and leave to rise for about 20 minutes.
5. When the yeast batter is puffy and has risen, add small pieces of softened butter.
6. Add the eggs to the butter, and work them in well.
7. Add the remaining flour and sugar, the cinnamon, cardamom, mace and mix.
8. When all the flour has been added, turn the dough out onto a floured surface and knead it vigorously by hand for about 20 minutes, until it is smooth and no longer sticky.
9. Form the dough into a ball and place it in a bowl.
10. Cover the bowl and leave it to prove in a warm place for about 2 hours, or until it is double its size.
11. Kneading the dough lightly and shape it as required
Forming a ring:
1. Flour a tray and divide the dough into 30g pieces. Roll each piece into a ball and poke your floured finger through the centre.
2. The holes should be about 2 cm in diameter Place the rings on a tray, cover with a tea towel and leave them to rise until they double their size.
Deep frying the rings:
1. Fill a deep pan two-thirds full with oil, heat the oil to 190°C.
2. Slide each ring into the hot oil.
3. Cook the rings for about a minute on either side until golden brown.
4. Remove from oil and drain.
Coating with sugar:
In a wide, shallow dish, mix castor sugar and a little ground cinnamon.
Allow the doughnuts to cool slightly, then place them in the dish.
To Serve: Coat the doughnuts with sugar and serve in a napkin-lined container.
