Delicious Cinnamon Apple Bread packed with warm cinnamon and juicy apple bits!
Ingredients:
2 Large Eggs
½ Cup Granulated Sugar
½ Cup Brown Sugar, packed
1 ½ tsp Cinnamon
2 tsp Vanilla Extract
1 ½ Cups All-Purpose Flour
½ tsp Salt
1 ½ tsp Baking Powder
1 Large Apple, peeled and finely diced
½ Cup Unsalted Butter, melted
½ Cup Milk
Method:
Preheat the oven to 175ºC. Lightly grease a loaf tin (22 x 11cm) with non-stick spray. Line the tin with baking paper and spray again with non-stick spray.
In a small bowl, combine the brown sugar and cinnamon and set aside.
Using a hand mixer, combine the eggs and granulated sugar until pale and creamy (2 minutes). On low speed, gradually add the melted butter, vanilla extract and milk until evenly combined.
Add the flour, salt and baking powder to the mixture and mix on low speed until smooth.
Add the apple to the batter and gently fold into the mixture with a spatula.
Assemble:
Spoon half of the batter into the prepared tin. Springle half of the brown sugar and cinnamon mixture over the batter.
Repeat with the remainder of the batter and brown sugar and cinnamon mixture.
Bake for 45-50 minutes or until the bread is golden.
Remove from oven and allow to cool for 30 minutes.
