Sticky toffee and banana muffins are guaranteed to sell out for any bake sale and are a great sweet treat for lunch boxes.
Ingredients:
2 ½ cups Baker's Dream Flour
1 tsp baking powder
1 cup castor sugar
1 egg
½ cup oil
2 tsp vanilla extract
¾ cup milk
3 cups mashed bananas
150g caramel chips
Caramel sauce
Method:
Preheat the oven to 180°C.
Add the Baker's Dream Flour, baking powder and sugar to a large bowl and mix to combine.
Place the egg, oil, vanilla extract, milk and mashed banana in a medium-sized bowl and whisk to combine.
Add the egg mixture to the flour mixture and fold until almost combined. Fold in the caramel chips.
Bake for 25-30 minutes.
Remove from the oven and allow to cool slightly before drizzling over the caramel sauce.
