We are fully capable of producing top-quality Italian graded products exceeding the best available in South Africa.
The IL Molino mill is the first of its kind in South Africa with the latest Italian technology proudly supplied by OMAS SRL.
The Plant was designed and supplied with the intention of manufacturing various artisanal and speciality flours that are generally imported.
WITH THIS IN MIND IT WAS BUILT WITH THE FOLLOWING CHARACTERISTICS:

Produce different types of fibre-enriched flour, thanks to a state-of-the-art system to mix the flour with calibrated bran.

The mill is capable of extracting 80% of baking flour with ash content below 0.55 % and less than 1 on the colour index (Kent Jones).

The flour, when required, may have a degree of starch damage up to 7-8 U.F with resulting H20 absorption of 65-66 %.

The flour is free from organic impurities, thanks to a patented wheat sterilisation process carried out using the Giotto system.

The bacterial load is absent since the Plansifters are completely built in sandwich panels and therefore have no dew point (no condensation).

Performance is continuously controlled by scales connected to the SCADA supervision system for analysis of the operating costs for each speciality recipe at the highest quality.

Flour is continuously tested to make sure it is of the highest quality and meets various rigorous standards and requirements required in various applications.
